Roasted Turkey Sausage with Potatoes, Peppers, and Onions

“Oh my gosh, that looks awesome. I’m not even kidding.”
That from my 11-year-old as he gazed upon this dish waiting its turn in the oven, soon to become Roasted Turkey Sausage with Potatoes, Peppers, and Onions. And a family favorite recipe!

I’m a huge fan of Italian sausage flavors, and I use the leaner turkey version frequently in a quick stove-top sausage-n-pepper thing that the whole family adores. When my girl, Shirl, mentioned she does a similar version, but in the oven and with potatoes, I went on a search. Turns out there are a gazillion versions of “roasted sausage, potatoes, and peppers” recipes out there. Evidently it’s an Italian staple, and I’m the last to know.

I decided to go with this recipe because I adore both mustard and Parmesan. I thought they might work well with the combo of veggies and sausage.

I love it when I’m right.

Roasted Turkey Sausage with Peppers, Potatoes, and Onions -- Juggling With Julia

What makes this so great? It smells like heaven and is packed with zing and flavor.  It’s a bowlful of potatoes, veggies, and meat and is all you need to fill up.  One-stop eating at it’s best!  Feel free to make a salad to go along with it if want, but you could just park yourself in the La-Z-Boy while it’s cooking, enjoy the heavenly aroma, and catch up with yourself 🙂

We (and by “we” I mean me and all the boys) gobbled this up. The 13 and a half year old had seconds and thirds, while his brother groaned in satisfaction at every bite.  I don’t need any better endorsement than that! Pay no attention to the dissenting 7-year-old, who thinks even sweet Italian sausage are too spicy. Clearly, she can not be trusted.

Roasted Turkey Sausage with Potatoes, Peppers, and Onions

Serves 6
Adapted from Cinnamon Spice and Everything Nice

Prep time: 20 minutes     Cook time: ~45 minutes

5 Italian turkey sausage links (about 20 ounces)
4 small potatoes, peeled and cubed into 1″ pieces (about 4 cups)
2 large bell peppers, cut into chunks (about 2 cups)
1 medium sweet onion (like Vidalia), peeled and cut into 6-8 wedges (about 2 cups)
1/3 cup olive oil
1 tablespoon Dijon mustard
1 teaspoon minced garlic
2 tablespoon grated Parmesan
1/4 teaspoon EACH rosemary, oregano, basil, marjoram (or simply 1 teaspoon Italian seasoning)
3/4 teaspoon salt
1/4 teaspoon black pepper
Preheat oven to 450 degrees Fahrenheit
1) Using a sharp knife, cut the sausage link crosswise into 4 even chunks. Set aside.
2) In a bottom of a large mixing bowl, whisk together the olive oil, mustard, garlic, Parmesan, spices, salt and pepper. Add the potatoes, onions, and peppers and use a spatula to combine until all pieces are well-coated. Carefully fold in the sausage chunks.
3) Layer the mixture on a baking tray large enough to hold it in a single layer. (I used a cookie sheet with sides). Cook for about 45 minutes, stirring every 15  minutes. Potatoes will be browned and veggies will be softened.

    Hi Julia,

    I make this same dish with vinegar peppers and add a bit of the juice. It comes out awesome.

    I made this tonight except I used chicken sausages and I added a sweet potato. No leftovers but I think I ate most of the veggies (they eat the white potatoes) :-/ Wish my family wasn’t so particular!!!
