Pumpkin Recipes to Pump You Up for Autumn

It’s coming and we can’t stop it…cooler night, shorter days, and crisp leaves under our feet. WAHHHHH! We could grump around and mourn the loss of summer all month long. But, I thought – this year – maybe we could try to make the best of it with some of my best pumpkin recipes.

Why pumpkin? It comes down to convenience, affordability, and, of course, good nutrition. Canned pumpkin is a genius invention, really, and there are few ingredients in my pantry I rank higher. For about a dollar a can, you have 15 ounces of a ready-to-use vegetable that is packed with vitamin A and fiber. Canned pumpkin lends wonderful texture and flavor to baked goods, and is a fantastic addition to savory dishes as well.
