Guacamole Stuffed Cherry Tomatoes with Bacon

It’s the midpoint of summer and tomatoes are sweet and plentiful. Wondering what to do with all those cherry tomatoes? How about you turn them into bite-sized packages of delight! A little guacamole, a little bacon, and and a minimum of effort, and you’ve got Guacamole Stuffed Cherry Tomatoes with Bacon.

They’re the perfect dish to bring for that last minute cookout invite, and also a great side dish for any night you’re grilling on the deck. Whatever you need, these little beauts answer the call.

Absolutely yes, they are as amazingly delicious as they sound. Even better, they are both simple and impressive. The best part, though? You can eat a plateful of them for supper and be reasonably assured you’re following a balanced diet. 🙂

Think you don’t have the time? Trust me. You have the time. Make the guacamole while the bacon is crisping up, then it’s as easy as scoop, stuff, and serve. Voila´!

Guacamole Stuffed Cherry Tomatoes with Bacon

Turn everyday cherry tomatoes into a little taste of heaven. Stuffed with savory guacamole and crisp bacon, these beauts are a bite-sized smorgasbord!

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1/2 pint cherry tomatoes washed
  • 4 slices bacon cooked crisp
  • 1 med avocado
  • 2 tablespoons feta cheese
  • 2 tablespoons diced red onion
  • 1 teaspoon lemon juice
  • ground black pepper to taste

Instructions

  1. Cut each cherry tomato in half horizontally. Using a melon baller or a spoon (a grapefruit spoon works very well), scoop out the inside of each half. Set aside.

  2. Cut the avocado in half and throw away the pit. Scoop out the insides and mash with the back of a fork.

  3. Stir in the red onion, feta cheese, lemon juice, and black pepper. Adjust seasonings to taste.

  4. Fill each hollowed out tomato half with guacamole to slightly overflowing. 

  5. Break off small pieces of bacon, and place a piece on top of each guacamole-stuffed tomato.

  6. Best if served immediately.

    Great idea for a bite size snack or appetizer! Even children can enjoy this snack.
