Grilling year-round works no matter where you live, right? Today I’m sharing this super-simple recipe for Indian Spice Rubbed Chicken. It’ll be on your grill in a flash, delivering big-time on both flavor and simplicity.

Isn’t this rub just beautiful? The warming flavors of turmeric, curry, and cumin are the flavor stars here.

Perhaps you’re thinking it’s not worth it to buy turmeric (the one that’s a brilliant orangey-yellow), because you don’t know what else you’d use it for. Forget that line of thinking. In addition to this easy go-to spice rub, it is key in this delicious Creamy Chickpea Curry, which – if you haven’t tried yet – HELLO, WHAT ARE YOU WAITING FOR?

I’ve also been adding turmeric to my oatmeal along with my DIY Chai Spice mix lately, and it’s lovely. A wonderful way to wake up my senses in the morning!
But, most of all, you’ll definitely want to get the turmeric (just do it, already) cuz this Indian spice rubbed chicken is QUICK, EASY, AND YUMMY.
Indian Spice Rubbed Chicken - Juggling With JuliaThe first time I made it, I turned it into a light supper by adding the Indian Spice Rubbed Chicken on top of a salad, with sides of tabouleh and hummus. I drizzled a quick hummus dresing over the top, too, that I made by thinning the hummus with water, olive oil, and lemon juice (a yummy dressing if you’re looking for something new to top your salad!)

Next time (and there will SO be a next time), I’m going to mix it into a traditonal chicken salad, using some yogurt in place of mayonaisse, along with some pistachios and celery. Ooh I can’t wait!

Indian Spice Rubbed Chicken

This simple 5-ingredient Indian spice rubbed chicken leads to a satisfying, flavor-packed meal that's on your table in well under 30 minutes. The rub takes just moments to prepare, and you can prep the salad while the chicken is grilling. Enjoy!

Ingredients

  • 2 teaspoons turmeric
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 lb boneless chicken breasts
  • salad greens
  • hummus
  • tabouleh or bean salad

Instructions

  1. Preheat grill on medium heat. Mix spices together in small bowl or jar and set aside.

  2. Lay chicken breasts flat on a platter or cutting board. Sprinkle about half the spice mixture over the breasts and rub in with fingers. Turn over the chicken and repeat on the other side.
  3. Grill chicken 3-4 minutes per side over medium heat, until fully cooked (internal temperature 165 Fahrenheit)

    Transfer chicken to cutting board and let rest while preparing salad.

  4. Arrange greens on a plate. Slice the chicken on the diagonal into 1/4 inch slices, then arrange the sliced chicken on top of the greens. Add accompaniments as desired, such as bean salad or tabouleh or hummus.

  5. If desired, make a simple dressing by whisking together 3 tablespoons of hummus with a drizzle of olive oil, a squeeze of lemon and a teaspoon of water.
