Eggs Three Ways: Easy Egg Ideas

Simple, quick and versatile, eggs are a great option at any meal.  If you’re looking for easy egg ideas to help inspire some simple meals, you’re in the right place! Eggs are so flexible in the kitchen. You can poach, scramble or fry ’em; stack, fold, or pile ’em. Dress them up with sauteed veggies or turn them into a berry-filled brunch centerpiece.

Better yet, eggs are inexpensive, and nutritious. In addition to being an inexpensive source of quality protein, they deliever important nutrients like lutein and choline, which support eye and brain health. For a long time, their releatively high cholesterol content meant those with heart disease had to limit intake. Fortunately, research has changed that health guidance over the years and most people can eat eggs daily as part of a healthy diet.

So, go ahead and pick your meal, and pick your style – eggs work, anytime, anywhere.

Our favorite easy egg ideas

There are many ways we enjoy eggs in this house, and, ironically, less often for breakfast than for brunch or lunch. Let’s countdown the ways:

#3 Old-fashioned scrambled eggs.  It is so easy to turn eggs into a wholesome healthy meal. Just look at that spread!  High quality protein, vibrant fruit, whole grain muffins, and a little bit of bacon just to keep things interesting.  Yum!  This has saved me many a night when I was ill-prepared to feed my family.

Old-fashioned Scrambled Eggs

#2 Scrambled egg tostada. A tostada is a corn tortilla layered with complementary foods. I keep corn tortillas around for my Southwestern Chicken Soup so using them as the layer here is convenient. You just scramble the eggs, then set them aside for a minute while you heat the tortilla in the pan. Then, lay down some baby spinach, pile on the scrambled eggs, then add cheese, sautéed onions and mushrooms, or salsa and avocado.  Shazam! Your meal is ready. These are fun for kids to build for themselves, too.

Egg, Mushroom and Onion Tostada

#1 Egg and Cheese Sandwich. Classic and all-American, the egg and cheese sandwich is hands-down our family’s favorite. A simple fried egg (I use olive oil – a teaspoon or two), sharp cheddar, and a whole grain English muffin does it. I love mine stuffed with baby spinach and sliced red tomato, plus a little hot sauce. It’s a complete meal in about 8 minutes, and has fed me after a long workday many times. Simply delish.
