This easy Lentil Rice Salad with Goat Cheese is wholesome, whole grain, and wholly delish! Canned lentils and frozen brown rice make this a breeze to make.
In a medium bowl, add the rice, lentils, bell pepper, tomatoes, goat cheese, and snipped chives. Drizzle the vinegar and olive oil over the top, then add the salt and pepper. Toss gently to combine.
Serve cold or at room temperature. Store leftovers in tightly sealed container in refrigerator for up to 4 days.
