Today’s quote is brought to you by Adelle Davis, a well-known nutritionist and cookbook author. She believed there wasn’t much that could not be solved by a healthy diet. An influential voice in the 60′s and 70′s, her then-controversial ideas about avoiding excess sugar and saturated fat, and her warnings about processed foods and pesticides are still relevant in today’s nutrition debates.
I love this quote and its meaning. But operationalizing such an ideal is a little more challenging. Oh, how I wish I COULD sit down to a feast early in the morning on those days where I know I’ll be on the run until bedtime! I do my best, fueling up most often with a big bowl of whole grain cereal topped with dried fruit, nuts, and non-fat milk. This keeps me going through the morning as I workout, attack a whirlwind of chores and errands, or expend lots of brain power during a meeting.
Eating supper like a pauper? I can do that. I love simple, one-stop eating, as it were. One and done. One bowl of stuff. One wrap filled with goodies. Or one sandwich-thingy layered with everything I need. The egg muffin sandwich is definitely one of my faves! (Hello?! BACON!)
I know you don’t need a recipe. But I also know I can’t just drop some photos and bid you adieu So here ya go, my favorite twist on the classic egg muffin sandwich. If this is how a pauper eats, I’m in!

Avocado, Bacon, and Egg Muffin
1 ounce sliced cheddar
2 wedges of avocado
2 tomato slices
1-2 slices crisp bacon
1 whole grain English muffin
salt and pepper to taste
Heat small non-stick pan over medium heat. Prepare pan with a light coating of spray oil. Add egg, and cook until yolk is set (I like my yolk broken, and over easy). Remove pan from heat, add sliced cheddar and cover with lid for a few moments until cheese has melted. Toast English muffin. Add egg/cheese to muffin, top with tomato, bacon, and avocado. Salt and pepper to taste. Add muffin top (though this sandwich should NOT add a muffin top to you!!!)
