Oats? Again?? You betcha. This time it’s an Apple Chai Spice Overnight Oats. This dream breakfast will have your taste buds dancing even before you’re brain realizes you’re truly awake.
Overnight oats have been ruling the recipe boards on Pinterest for a couple of years. Why is that?
In addition to oats delivering plenty of nutrition by way of protein, soluble fiber, iron, B-vitamins, and more, its incredibly versatile. Overnight oats require no cooking, are portable, and can assume almost any flavor combo you can dream up!
So, if you haven’t yet given this nouveau twist on breakfast a try, perhaps it’s time?
This Apple Chai Spice version of overnight oats is a delicious way to start. Oats, chia seeds, milk, shredded apple, brown sugar are featured here, but the real showstopper is my latest fixation → DIY Chai Spice Mix.
The combination of cinnamon, clove, allspice, ginger, cardamom, and black pepper has me utterly obsessed, and now I can’t eat my morning oatmeal without it.

Apple Chai Spice Overnight Oats
A lightly sweet overnight oats featuring apples, chai spice mix, and brown sugar. This recipe also include chia seed, which allow the oats to thicken up a bit and provide more protein and omega 3's. However, you can make these oats without chia seeds with good results.
Ingredients
- 1 cup rolled oats gluten free if necessary
- 1 tablespoon chia seeds
- 1 cup milk of choice dairy, soy, almond
- 1/3 cup shredded apple skin included
- 1 teaspoon chai spice mix see Recipe Notes
- 1 1/2 tablespoons brown sugar
Instructions

Mix all ingredients together in small mixing bowl. Transfer to two portable covered containers (ie., jar with screw-top lid or similar). Let rest in refrigerator for 3 hours or overnight.

Eat cold or at room temperature. If desired, you can heat in a microwave-safe container for about 30 seconds to warm it up.
Recipe Notes
DIY Chai Spice Mix: combine 1 teaspoon each of cardamom, cloves, allspice with 3 teaspoons ginger, 2 teaspoons cinnamon, and 1/4 teaspoon black pepper. Mix thoroughly. Use 1 teaspoon of the mixture for this recipe. Store the rest in small jar with secure lid for future use.
Chia seeds add a good dose of nutrition to these oats (particularly protein and omega 3's) as well as providing some thickening. However, you can enjoy this recipe without chia seeds if you have none on hand.
Allergy/Dietary Accomodations: This recipe is gluten free if you use gluten-free oats. It can be made dairy-free as well with use of soy, almond, or other milk alternative. I used soy milk in this recipe.
